Sweet Crepes


Crepes are one of those perfect foods that could be dressed up or dressed down to suit your mood and time of day.   I love sweet crepes for breakfast, lunch or dinner but once in a while, I need a savory filling such as sauteed mushrooms.  This is one of those foods that you could make your own by simply changing the toppings or stuffing.  In the past, I’ve used bananas with chocolate sauce, preserves, powdered sugar, strawberries, mushrooms, and chocolate sauce or a vegan riff on nutella.  That vegan nutella, let me count the ways I love thee! Warm. Oozy. Hazel-nutty Chocolatey goodness.   Oh yeah and non-dairy whipped cream. Sigh!

I have one tip on making crepes. Okay two.  First, if you plan on having them for breakfast, an overnight stay in the fridge is a must! It helps rest the batter, flour absorbs the liquid and all air bubbles escape.  Trust me, you want them to escape. Second, make enough batter, do not skimp on this (you can freeze leftovers).  Enough said.

Recipe for: Crepes

Ingredients Directions
1 cup all purpose flour

1- 4 tbsp sugar, to taste

big pinch of salt

2 flax eggs* (2 Tbsp ground flax + 6 Tbsp water)

1 ½ cup soy or nut milk

4 tbsp veg oil

1 tsp lemon zest (opt)

1 tsp essence of choice (opt)

  1. In a large mixing bowl whisk flour, sugar and salt to combine.
  2. In another bowl beat the flax eggs, milk and oil then combine with dry ingredients, along with zest, whisking to a smooth batter. *You could do this all in a blender as well*
  3. Cover batter with plastic wrap and stick in fridge overnight or at least for an hour (the longer the better)
  4. When ready to cook, heat a non-stick skillet, add a little oil and spread 1/4 cup measure of batter and tilt the pan so that it spreads thinly across the surface of the pan.  (Or if you own a crepe set use the wooden crepe spreader)
  5. Cook each side for about a minute or until golden brown and serve warm with topping or filling of choice

Makes about 15-20 thin crepes
